Any ideas to stop my 1 yr old snipped male staffi/english/lab doing stubborn toilets on the floor?

Have had my dog about a year now (he was only 4 weeks when he left his mum - which was not my choice, i know it was too early) having managed to finally teach him about bite inhibition, the only thing now is an every day battle about not going to the toilet on the floor. He wont go on my carpets, only the lino and only when my back is turned i.e. night time when i am asleep. He goes for a long walk on the beach every morning and evening (not always the beach) and will then come home and toilet as soon as i walk through the door for example if i dont play with him etc. He has also done it when i was on the phone for 20 minutes, tried to play and when ignored, straight to the kitchen and dotted one around the floor. I know dogs arent able to rationalise, however it is almost in a manner of "your not doing what i want so take this". I am seriously getting to the end of my tether, i have tried rewards, longer walks, putting his nose to it, nappies, ignoring it, ignoring him, leaving it in his crate with him, (not for long though), removal of priviledges and toys, taking his bed off him, no treats, shouting, not letting him have his dinner until a long time after, putting his bed where he was mainly going (he just peed on the bed). I honestly think he is trying to dominate me with this, that is not going to happen, but he has been aggresive in the recent past, he took a chunk out of my foot a few months ago when i walked near his dinner so i hand fed for a short while and very much control meal times and i think i have broken that obsession (for now - fingers crossed). He is very good outdoors and with other dogs (although he still has jumping up issues and tries to steal peoples gloves etc.)and very clever, he knows hand signs for sit, down and stay (he had learnt this by 4 months). Will also obey vocally drop, stay and come back when called as well as shake (after a dip in the sea or a bath) find, up, back and heel. He will even lift his feet up in the bath to have them cleaned so i know there is a good mutt in there somewhere i just need to break this stubborn toilet cycle. Any ideas much appreciated and welcomed from both Adele and Rubens (the poobens) LOL:-) thanks

p.s: he has boundaries, he is not allowed on the sofa or my bed and certain areas are off limits too
